Description

Jelly Roll. From Alissa.

Ingredients

Scale
  • 3/4 cup (95g) flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 eggs
  • 3/4 cup (150g) sugar
  • 1 teaspoon vanilla
  • powdered sugar, for the towel
  • 2/3 cup jam

Instructions

  1. Heat the oven to 375°F (190°C). Line a 10×15 jelly-roll pan.
  2. Beat eggs and sugar until thick. Fold in flour, baking powder, salt, and vanilla. Spread in the pan and bake 10 to 12 minutes.
  3. Turn onto a towel dusted with powdered sugar, peel the paper, roll up in the towel, cool 15 minutes, unroll, spread jam, and roll again.

Notes

Roll it while it is warm. A cold sponge cracks.
