Filling

  • 6 medium baking apples (about 2 1/2 pounds / 1.1kg), peeled and sliced
  • 1/3 cup (67g) granulated sugar
  • 2 tablespoons (16g) all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon kosher salt
  • 1 tablespoon (15ml) lemon juice

Topping

  • 3/4 cup (68g) old-fashioned oats
  • 3/4 cup (94g) all-purpose flour
  • 1/2 cup (100g) packed light brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup (113g) unsalted butter, cold, cubed

Instructions

  1. Heat the oven to 350°F (175°C). Butter a 9×13-inch or 2-quart baking dish.
  2. Toss the apples with sugar, flour, cinnamon, salt, and lemon juice. Spread in the dish.
  3. Mix oats, flour, brown sugar, cinnamon, and salt. Cut in the butter until clumpy. Scatter over the apples.
  4. Bake 40 to 48 minutes until the topping is golden and the apples bubble at the edges. Rest 15 minutes. Serve warm.

Notes

Granny Smith, Honeycrisp, or a mix. Do not use instant oats. Ice cream is optional; the crisp stands alone.

Pears can replace half the apples. Gluten-free 1:1 flour works in the topping. Coconut oil is not a 1:1 butter swap here.
