Description

Blueberry Buckle. From Alissa.

Ingredients

Scale
  • 1/2 cup (113g) butter, softened
  • 3/4 cup (150g) sugar
  • 1 egg
  • 1/2 cup (120ml) milk
  • 2 cups (240g) flour, divided
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 cups (300g) blueberries
  • 1/3 cup (67g) sugar and 1/2 teaspoon cinnamon for the crumb
  • 1/4 cup (57g) cold butter for the crumb

Instructions

  1. Heat the oven to 375°F (190°C). Butter a 9-inch square pan.
  2. Cream the softened butter and 3/4 cup sugar. Beat in the egg and milk.
  3. Stir 1 3/4 cups flour, the baking powder, and salt into the batter. Fold in the blueberries and spread it in the pan.
  4. Rub the remaining flour, 1/3 cup sugar, cinnamon, and cold butter into crumbs. Scatter them over the batter and bake 40 to 45 minutes, until the crumb is golden and the center springs back.

Notes

Toss the berries with a spoon of flour so they do not all sink. Frozen berries go in still frozen.

Streusel, not frosting

The topping is butter, sugar, and flour rubbed to crumbs. There is no cream cheese.

Berry choice

Blueberries hold their shape. Raspberries break down and make a wetter cake.

Doneness

The crumb should be golden. A toothpick in the cake comes out with a few moist crumbs.

Serving

Warm squares with plain cream, not a layer of icing.

FAQ

Is a buckle a cobbler?

No. A cobbler puts biscuits on fruit. A buckle is cake with fruit inside and streusel on top.

Can I use frozen blueberries?

Yes. Add them frozen so they do not dye the batter purple.

Do I need a mixer?

A wooden spoon is enough. The batter is thick, not a sponge.

How long does it keep?

Covered at room temperature for 2 days, or refrigerated 4 days.
