- Total Time: 2 hours
- Yield: 16 bars 1x
Description
Key Lime Bars. From Alissa.
Ingredients
- 1 1/2 cups (150g) graham cracker crumbs
- 1/3 cup (75g) butter, melted
- 2 tablespoons sugar
- 4 egg yolks
- 1 can (14 ounces / 396g) sweetened condensed milk
- 1/2 cup (120ml) key lime juice
- 1 tablespoon lime zest
Instructions
- Heat the oven to 350°F (175°C). Line an 8-inch square pan.
- Mix crumbs, butter, and sugar. Press into the pan and bake 8 minutes.
- Whisk yolks, condensed milk, lime juice, and zest until thick. Pour over the crust.
- Bake 15 to 18 minutes, until the center barely jiggles. Cool, then chill at least 1 hour before cutting.
Notes
Bottled key lime juice is fine. Persian lime juice is milder, so use the same amount and expect a softer tartness.

Juice
Key limes are smaller and tarter. Bottled key lime juice is the practical choice.
Thicken
The juice reacts with the condensed milk. Whisk until it coats a spoon before it bakes.
Jiggle
A set edge and a soft center. A firm bake tastes eggy.
Cut
Wipe the knife between slices.

FAQ
Whole eggs?
Yolks make the classic silky set. Whole eggs work in a pinch and taste a little eggier.
Graham or biscuit?
Graham crumbs. A shortbread crust is a different bar.
Green food color?
No. The filling is pale yellow.
How far ahead?
A day in the fridge. The crust softens after that.
