Description

Shoofly Pie. From Alissa.

Ingredients

Scale
  • 1 unbaked pie crust
  • 1 cup (200g) flour
  • 1/2 cup (100g) brown sugar
  • 1/4 cup (57g) cold butter
  • 3/4 cup (180ml) molasses
  • 3/4 cup (180ml) boiling water
  • 1 teaspoon baking soda
  • 1 egg

Instructions

  1. Heat the oven to 375°F (190°C).
  2. Cut butter into flour and brown sugar until crumbs form.
  3. Whisk molasses, boiling water, soda, and egg. Pour into the crust, cover with crumbs, and bake 40 to 45 minutes.

Notes

The bottom stays gooey. A dry center means it baked too long.

Molasses

Not corn syrup. The flavor is molasses.

Soda

It reacts with the molasses and lifts the wet layer.

Crumbs

Half in the filling is the old way. This version keeps them on top.

Crust

Shield the rim if it colors early.

Nutrition (estimated)

About 320 calories per serving. Estimate only, not a lab test.
