This apple crisp recipe is the fall pan: sliced apples, cinnamon, and a buttery oat topping that bakes crunchy at the edges. It is not apple pie (no pastry crust) and it is not peach cobbler already on this site. Use this page when the search is apple crisp.

Crisp, not pie
Pie needs a crust. Cobbler uses biscuit or cake topping. This is oats and butter. Keep the URLs separate.
Substitutions
Pears can replace half the apples. Gluten-free 1:1 flour works in the topping. Coconut oil is not a 1:1 butter swap here.
Mistakes to avoid
Do not slice the apples paper-thin or they collapse. Do not pack the topping like a crust. Do not skip the rest or the juices run.
Storage
Room temperature 1 day, refrigerated 4 days. Reheat at 325°F until the top crisps again.
Nutrition (estimated)

FAQ
Do I have to peel the apples?
Peel for a classic crisp. Leave some skin if you want extra texture.
Is this the same as apple cobbler?
No. Cobbler has a biscuit or cake topping. This uses oats.
Can I make it ahead?
Assemble up to 8 hours ahead and refrigerate. Add 5 to 10 minutes to the bake.
What apples work best?
A tart-sweet mix. All Red Delicious turns mushy.
