- Total Time: 1 hour 15 minutes
- Yield: 10 slices 1x
Description
Banana bread with ripe bananas. From Alissa at Yummy Dishes.
Ingredients
- 1/2 cup (113g) butter, melted
- 3/4 cup (150g) brown sugar
- 2 large eggs
- 1 teaspoon vanilla
- 3 very ripe bananas, mashed (about 1 1/4 cups)
- 1 3/4 cups (220g) flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 cup chopped walnuts, optional
Instructions
- Heat the oven to 350°F (175°C). Grease a 9×5 loaf pan.
- Stir butter, sugar, eggs, vanilla, and bananas. Fold in flour, baking soda, salt, cinnamon, and nuts.
- Pour into the pan. Bake 50 to 60 minutes until a pick in the center comes out clean.
- Cool 15 minutes in the pan, then turn out. Slice when warm or the next day, when it is moister.
Notes
The bananas should be heavily spotted. Yellow bananas taste flat and bake a drier loaf. Do not turn this into banana pudding.

Loaf, not pudding
Banana pudding is wafers and custard. This is a baked quick bread.
Substitutions
A half cup of chocolate chips can replace the walnuts. Sour cream, 1/4 cup, makes a softer crumb.
Mistakes to avoid
A pale pick test that still shows wet batter needs more time. Tent with foil if the top browns early.
Storage
Wrap at room temperature 3 days. Freeze slices for 2 months.
Nutrition (estimated)
About 260 calories per slice. Estimate only, not a lab test.
FAQ
How ripe is ripe?
Mostly brown skins. Mash them with a fork, not a blender, so a few lumps remain.
Can I use frozen bananas?
Yes. Thaw and drain extra liquid, or keep that liquid and cut the banana measure to the same volume of mash.
Muffins instead?
Fill a muffin tin and bake about 20 minutes. This page is the loaf.
Why did it sink?
Too much banana, or the oven door opened early. Measure the mash.
