Description

Cinnamon rolls with cream cheese icing. From Alissa at Yummy Dishes.

Ingredients

Scale
  • 1 cup (240ml) warm milk
  • 2 1/4 teaspoons instant yeast
  • 1/4 cup (50g) sugar
  • 1 egg
  • 1/4 cup (56g) melted butter
  • 1 teaspoon salt
  • 3 1/4 cups (406g) flour
  • Filling: 1/2 cup soft butter, 3/4 cup brown sugar, 2 tablespoons cinnamon
  • Icing: 4 ounces cream cheese, 2 tablespoons butter, 1 cup powdered sugar, 1 teaspoon vanilla, 1 tablespoon milk

Instructions

  1. Stir milk, yeast, and sugar. Add egg, melted butter, salt, and flour. Knead until smooth, about 6 minutes. Rise 1 hour until doubled.
  2. Roll to a 12×16 inch rectangle. Spread the filling. Roll from the long side and cut 12 pieces.
  3. Set in a buttered 9×13 pan. Rise 40 minutes. Bake at 350°F (175°C) for 22 to 26 minutes until the centers are set.
  4. Beat the icing and spread it on the warm rolls.

Notes

Instant yeast can go straight into the dough. If the kitchen is cold, the second rise takes longer. Bake when the rolls look puffy and touch each other.

Yeast rolls, not a quick bread

Banana bread uses baking soda. These need a rise.

Substitutions

Bread flour gives a chewier roll. All-purpose is the softer one written here.

Mistakes to avoid

Hot milk kills yeast. It should feel warm, not steaming.

Storage

Keep covered 2 days. Rewarm a roll 10 seconds. Freeze unfrosted rolls and ice after reheating.

FAQ

Overnight rise?

Cover the cut rolls and refrigerate up to 16 hours. Let them puff at room temperature before baking.

Why are they dry?

They baked past the moment the centers set, or the dough had too much flour. The dough should be soft, not stiff.

Cream cheese or powdered sugar glaze?

Cream cheese is this page. A milk-and-sugar glaze is thinner and optional.

Active dry yeast?

Bloom it in the warm milk for 5 minutes before the rest of the dough.
