Description
Classic chocolate wafer icebox cake with whipped cream. From Alissa at Yummy Dishes.
Ingredients
- 3 cups (720ml) cold heavy cream
- 1/3 cup (40g) powdered sugar
- 2 teaspoons vanilla extract
- Pinch of salt
- 1 package (9 ounces / 255g) chocolate wafer cookies (about 40 cookies)
- Chocolate shavings, optional
Instructions
- Beat cream, powdered sugar, vanilla, and salt to medium-stiff peaks.
- On a platter or in a loaf pan lined with plastic wrap, spread a thin smear of cream. Stand wafers in a row, sandwiching cream between each cookie, to make a log. Cover the outside with the remaining cream. Or layer wafers flat in a 9×5 loaf, cream between layers.
- Cover and refrigerate at least 8 hours, preferably overnight, until the cookies are cake-soft.
- Slice on a slight diagonal. Add shavings if you want.
Notes
Nabisco Famous Chocolate Wafers are the classic. If you cannot find them, thin chocolate cookies work; Oreo pie is a different URL. Do not skip the long chill.
