Description

Butterscotch Blondies. From Alissa.

Ingredients

Scale
  • 1/2 cup (113g) butter, melted
  • 1 cup (200g) packed brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 cup (120g) flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (85g) butterscotch chips

Instructions

  1. Heat the oven to 350°F (175°C). Line an 8-inch square pan.
  2. Whisk melted butter and brown sugar. Whisk in the egg and vanilla.
  3. Fold in flour, baking powder, and salt, then the chips.
  4. Spread in the pan. Bake 22 to 26 minutes, until the edges are set and the center still looks slightly soft.

Notes

Brown sugar is the butterscotch. The chips are extra, not the base.

Sugar

Pack the brown sugar. Loose sugar makes a dry bar.

Center

Pull them when the center looks barely glossy. They finish as they cool.

Pan

Eight inches for a thick blondie. A larger pan bakes them into crackers.

Mix

Stop when the flour disappears. A smooth batter is overworked.

Nutrition (estimated)

About 210 calories per serving. Estimate only, not a lab test.

FAQ

No chips?

The blondie still tastes like brown sugar. Chips are optional.

White sugar?

Then it is a sugar cookie bar, not a blondie.

Cakey result?

They baked too long, or the batter was overmixed.

Storage

Airtight for 4 days. They stay chewy.
