Scale
  • 1 cup (226g) butter, softened
  • 1/2 cup (100g) sugar
  • 2 cups (240g) flour
  • 1/4 teaspoon salt
  • 1 cup (320g) seedless raspberry jam
  • 1 teaspoon lemon juice

Instructions

  1. Heat the oven to 350°F (175°C). Line an 8-inch square pan.
  2. Beat butter, sugar, flour, and salt to a crumb. Press half into the pan.
  3. Stir the jam with the lemon juice and spread it on the crust.
  4. Crumble the rest of the dough on top. Bake 35 to 40 minutes, until the top is pale gold.

Notes

Seedless jam slices clean. Whole seeds are fine if you do not mind them.

Jam

A thick jam. A runny one soaks the crust.

Lemon

A teaspoon brightens a dull jar. More than that tastes like lemon bars.

Crumb

Pea-sized pieces. Dust makes a paste.

Color

The jam will darken at the edge. That edge tastes like caramelized berry.

FAQ

Fresh raspberries?

Cook 2 cups with 1/3 cup sugar until jammy, then use that.

Other jam?

Apricot works the same way. Grape jelly is too stiff.

Oats in the crumb?

A quarter cup is fine. The base should stay mostly flour so it holds.

Cut

Cool, then chill 20 minutes for the cleanest squares.
