Ingredients

  • 6 cups (720g) fresh or frozen blackberries
  • 3/4 cup (150g) sugar
  • 1 tablespoon lemon juice
  • 2 tablespoons cornstarch
  • 1 cup (125g) flour
  • 1/2 cup (100g) sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (120ml) milk
  • 4 tablespoons (56g) melted butter

Instructions

  1. Heat the oven to 375°F (190°C). Toss berries with 3/4 cup sugar, lemon, and cornstarch. Spread in a buttered 9×13 dish.
  2. Stir flour, the remaining sugar, baking powder, and salt. Stir in milk and melted butter until just combined.
  3. Spoon the batter over the berries. It will not cover every gap.
  4. Bake 40 to 48 minutes until the top is golden and the filling bubbles at the edges. Rest 15 minutes.

Notes

Frozen berries can go in frozen. Add 5 minutes if the dish was cold. Do not thaw them first or the filling floods the batter.

Half raspberries works. A pinch of cinnamon in the batter is optional.
