Ingredients

Scale
  • 3 cups (600g) sugar
  • 3/4 cup (180ml) evaporated milk
  • 4 tablespoons butter
  • 2 cups semisweet chocolate chips
  • 1 teaspoon vanilla
  • 1 cup chopped walnuts, optional

Instructions

  1. Butter a pan.
  2. Boil sugar, milk, and butter to 234°F (112°C), stirring.
  3. Off the heat, stir in chocolate, vanilla, and nuts until the shine fades. Spread and cool.

Notes

Thermometer

Soft ball is the whole recipe. Guessing is how fudge stays goo.

Chocolate

Chips melt cleanly. A chopped bar works too.

Nuts

Fold them in at the end.

Pan

8-inch square gives a thick piece.

Nutrition (estimated)

About 320 calories per serving. Estimate only, not a lab test.

FAQ

Evaporated or condensed?

Evaporated. Condensed milk is already sweetened and will not set this way.

Grainy fudge

The sugar crystallized. Stir less on the boil next time.

Storage

Airtight at room temperature for a week.

Humidity

A wet day keeps it softer.
