Description

Linzer Cookies. From Alissa.

Ingredients

Scale
  • 3/4 cup (170g) butter
  • 2/3 cup (130g) sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 3/4 cups (220g) flour
  • 3/4 cup almond flour
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup raspberry jam
  • powdered sugar

Instructions

  1. Cream butter and sugar. Beat in egg and vanilla. Stir in both flours, cinnamon, and salt. Chill 30 minutes.
  2. Heat the oven to 350°F (175°C). Roll and cut pairs. Cut a small window from half of them. Bake 10 to 12 minutes.
  3. Dust the tops with powdered sugar, spread jam on the bottoms, and sandwich them.

Notes

Cut the windows before baking. A baked cookie cracks if you cut it.

Almond flour

That is the linzer flavor. All-purpose alone is a different cookie.

Jam

Raspberry. Seedless spreads cleaner.

Pairs

Same size tops and bottoms.

Sugar

Dust before the jam so the window stays clear.

Nutrition (estimated)

About 320 calories per serving. Estimate only, not a lab test.

FAQ

Other jam?

Apricot works. Keep it thick.

Storage

Filled cookies keep 3 days. The jam softens them.

Dough

Chilled, 2 days.

Nuts

A handful of ground hazelnuts can replace part of the almond flour.
