Description

Chocolate Mousse. From Alissa.

Ingredients

Scale
  • 4 ounces (113g) semisweet chocolate
  • 2 tablespoons butter
  • 2 tablespoons strong coffee or water
  • 2 eggs, separated
  • 2 tablespoons sugar
  • 1/2 cup (120ml) cold heavy cream

Instructions

  1. Melt chocolate, butter, and coffee. Cool until lukewarm. Stir in the yolks.
  2. Beat the whites to soft peaks, add the sugar, and beat to stiff peaks. Whip the cream.
  3. Fold whites and cream into the chocolate. Spoon into glasses and chill 2 hours.

Notes

The chocolate must be lukewarm. Hot chocolate scrambles the yolks and melts the cream.

Cream

Whipped to soft peaks before it joins the chocolate.

Chill

Two hours. It will not hold a spoon before that.

Nutrition (estimated)

FAQ

No raw eggs

Skip the whites and yolks and fold the chocolate into 1 cup of whipped cream. It will be denser.

Storage

Fridge, 2 days.

Coffee

It sharpens the chocolate. Water works.

Top

A spoon of cream, not more chocolate sauce.
